White Tea

White tea is semi-oxidized. However, that doesn't mean it is an oolong. There is no shaping (bruising) when it comes to white tea. The leaves are withered and then left to dry. If the weather is ideal, the leaves will be left out in the sun or under some sort of awning, partially shading it from the sun. This is why white tea looks like fall foliage.
