Tie Guan Yin
This Tie Guan Yin is grown and harvested in Maokong, Taiwan. The producer, Mr. Chang, roasts this tea for 10 hours. I first found this tea 6 years ago when I was walking around Maokong. On this most recent trip to Taiwan, I was able to make it back out to their shop and purchase some of this tea.
The winter harvest was processed in the middle of November but roasted in early December.
Recommended brewing: 6g of tea; 8oz of water 95 degrees celcius
