Hailing from the Westlake area of Hangzhou, Long Jing tea is one of China's most famous teas. Though, Long Jing is produced in other areas of Zhejiang Province, it is traditionally grown around West Lake. To be considered West Lake, or Xi Hu Long Jing, the tea must come from 1 of 5 production areas.

We chose a tea from Yunxi Village. Yunxi Long Jing is considered third best when compared to the other production areas of West Lake. We chose a tea from this village because we wanted to offer a high quality tea at a great price. We feel like we succeeded with this tea.

A bud and one to two were plucked during mid-May. After the tea is withered, it is then placed into a wok to dry to dry the leaves and kill the enzyme that oxidizes the leaves.
The leaves are constantly moved around the wok by hand or with a brush so they don't burn. As the leaves start to soften up, they are then lifted out of the wok and dropped back in. Not only does this separate clumped tea leaves, it allows moisture to escape as the tea dries.
After the leaves drop back into the wok, they are pressed against the wok surface. This gives the tea its signature look.
